Grapes are picked by hand in 14kg crates, fermented for 9 days at between 23ºC and 28ºC and then macerated for a further 10 days. During this time, when the maximum temperature of fermentation is reached, we carry out a daily process of pumping over. The final step is to let the wine rest in barrels of two different types of oak for around 15 months and then at least 12 months more in bottle.
Bright, dark purple colour. Fruit aromas with balsamic spices and hints of
cumin, clove and nutmeg. Excellent structure. Tasty and fresh on the palate, it leaves a long finish. Much more than a normal crianza wines.
Bodegas Valduero was founded in 1984 by the current president, Don Gregorio Garcia Viadero, and his daughter Yolanda, who is the winemaker. It was one of the first wineries to be incorporated into the D.O. Ribera del Duero and is situated in the village of Gumiel de Mercado, within the province of Burgos, an area where some of the best grapes in Ribera del Duero are grown. It is probably the highest elevated winery in the region at 840m (2,750 ft).
The whole winery has a natural, constant temperature of 12ºc, due to the fact that it is buried under ground. This enables it to carry out slow crianzas which allow the wine to stabilize naturally.
Winery uses a combination of oak barrels made from American, French and East European oak. The barrels are all 225l and are replaced every four years.
