The Les Monets 2019 cuvée is made exclusively from Pinot Meunier, sourced from the eponymous plot located in Lhéry, in the heart of the Vallée de l’Ardre. This unique terroir is distinguished by its calcareous soil, offering exceptional minerality, and a southwest orientation that ensures perfect ripeness of the grapes.

Vinification is carried out in stainless steel vats to preserve the purity of the aromas. Malolactic fermentation has been practiced, bringing roundness and suppleness to the wine. After aging on fine lees, the bottles were placed in the cellar in May 2020 for prolonged aging, punctuated by regular riddling. This process allows the lees to be kept in suspension, thus enriching the texture and aromas of the champagne. Finally, the dosage in Extra Brut highlights its precise and balanced character.
