TROUSSEAU
A Jurassian variety par excellence, Trousseau is also difficult to cultivate and gives low but more regular yields (especially Trousseau à la Dame).
This variety with thicker skin is more resistant than Poulsard; it is adapting better to global warming.
TERROIR
Geological surveys have shown that ideal sites for growing Trousseau exist all over the Jura. In Montaigu our Trousseau vineyard is situated in the Val de Sorne gorge (on the southern slope of the village) with
south, south-easterly exposure.
The soil is composed of gravelly limestone and variegated, triassic, Keuper marls.
OUR WINEMAKING KNOW-HOW
Work in the Vines Vineyard tended biodynamically, Demeter inspection and certification since 2003: applications of horn manure, silica and herbal teas.
TASTING NOTES
Intense ruby in colour with some lighter red tints; bright and crystal-clear. A firm nose with fruity notes of black cherry, hints of spices and toast. Fresh and fruity attack, giving way to a structured, velvety evolution, with elegant, tannic length.
Has the potential to age for up to 20 years.
FOOD PAIRING SUGGESTIONS
Try the Trousseau at 16°C with a roast, any beef or veal dish, pâtés, waterfowl or cheese.
